Chicken and Spinach Curry
Super quick, super easy and super tasty!
Used:
350g cooked chicken (part of £6 crown) about £2 worth
125g fresh spinach (70p reduced)
2/3 pot of curry paste (in fridge)
1 brown onion (15p)
Pinch of garlic powder
Pinch of salt
Boiling water
Method:
1. Finely chop the onion and place over medium heat until it starts to brown
2. Add in the curry paste, garlic and salt and stir on the heat until it's all mixed in
3. Chop the chicken and put into pan and mix into the sauce (if using fresh chicken stir to heat up for a couple of minutes before proceeding)
4. Add in the spinach - I got too eager hence no picture of the previous step!
5. Fill with boiling water to cover everything in the pan - I used a small pan so had to fill with water and then gradually add in the spinach.
6. Once boiling cover the pan and leave to simmer until the chicken is cooked (if using fresh) or just leave until the chicken is warmed - about 5 minutes for me.
Served with:
Golden vegetable rice and a few prawn crackers (left over from the Chinese last night 😋 )
